If I want to quench my thirst in the summer time, I usually will settle for a portable ripe peach, plum or mango – even though I’ve been eating the summertime ubiquitous watermelon since childhood and usually just by the slice. When it’s a balmy summer day, you simply just can’t be bothered to do any complex cooking preperation and want to get hydrated stat..
What can you prepare that’s light on your stomach – and wallet -? Call it a slightly uncanny combination but it’s nothing short of a refreshing one after an invigorating work day or workout. Watermelon is rich in Vitamin C and Vitamin A and fresh cucumbers have anti-inflammatory and antioxident properties which is helpful for heart patients, preventing cardiovascular disease as well as cancer.
Watermelon and Cucumber Salad
- 1 watermelon (or a 1 lb and a 1/2, depending on your “army”)
- 2 seedless cucumbers, sliced lengthwise and then diced
- 2 tsp s of lime juice
- 8 sprigs of fresh mint leaves
- sea salt
- freshly cracked brown pepper
Add melon and cucumbers to bowl. Add mint leaves. Add lime. Add salt and pepper. Mix gently. Serve alone or alongside a sandwich.
Easily an under fifteen dollar (or even ten dollar meal) especially seeing as you have most pantry staples and the melon and vegetable can easily be bought at your farmers market. Fresh mint can easily be purchased for an inexpensive price at your farmers market as opposed to paying salty at the store sometimes.
